...To Infinity & Beyond

Last week I was so under the weather with a damn cold, so I was not up for blogging at all... 
There is something that I really wanted to blog about though, so we are going to take it back a few days.

On March 27 my husband & I celebrated FOUR YEARS of marriage {& March 29 marked our FOURTEEN YEARS together}. To some this might not be a big deal, but for us this is HUGE. Marriage is no joke !! It is not flowers & picnics & being lovey all the time; it takes so much work. There are so many ingredients that make a marriage work, but these a just a few that we found out throughout the past 4 years of our marriage. 

Patience
Love
Humor
Strength
Compromise
Faith 


I am so proud & happy with how far my husband and I have come throughout the years. In my heart, we are stronger than we have ever been before. 
Yes, he drives me insanely crazy when I find dirty clothes on the floor 2 centimeters from the hamper, used paper towels all over the kitchen, toilet paper anywhere but on the toilet paper holder, etc... And yes, we argue about the dumbest stuff on the planet, but all of this {& the good times} is what makes us, us


I could not imagine being with anyone else. I cannot wait until the day he becomes the father of my children- just thinking of it makes my heart jump out of my chest !  
My love for him is forever... And I want to be able to have a strong, loving marriage to show my children down the road. To be able to show them that, although marriage is hard, you can have it {and love} if you work hard at it. 


I cannot wait to see what the years to come have in store for us- starting a little family of our own {hopefully soon}, sharing laughs, & making memories. I love you my polar opposite soul mate- to infinity & beyond !!!

{Flash Back} Sunday In Pictures

So I thought it would be a fun idea to do a day in photos. Let me warn you... my life is SO exciting !! Don't be jealous ;) 

8:00 am-- enjoying being able to sleep in & relax a little without rushing out of bed... 

9:00 am-- Guzzling Sipping on my go to Starbucks {iced chai tea latte with soy milk}...

10:00 am-- Strolling through Publix, picking up our weekly goodies... 

11:00 am-- Cleaning, organizing, & unloading all the groceries...

12:00 pm-- Car wash with hubby... 

1:00 pm-- Lunch time for hubby & I... {taco quesadilla}

2:00 pm-- Potting some new gorgeous daisies that I picked up... 

3:00 pm-- Putting my maid hat on...Cleaning up the "throne"...

4:00 pm-- Nap time with lumber jack duck dynasty hubs...

Friday Favorites-- Etsy Shops

When I first found out about Etsy, I thought it was the greatest thing ever!! There are so many shops that I have such great products, that I have shopped at and/or that I cannot wait to shop at. It is such an awesome site for people to be creative and make a living from it. I love supporting these shops :) 

I have been looking for some plain, colored pillow cases for our living room & I came across this site (Sukanart) & am loving all of the pillow colors and designs. I have my eye on several items & cannot wait to add them to my hoarding collection of pillows. 


The next shop that I love is, emilymcdowelldraws. If you are looking for funny, one-of-a-kind greeting cards for people-- Stop Here!!! I have three saved as my favorites right now :) The site also offers cute prints & hand towels. 




StudioMucci is another favorite of mine. For the millionth time, I am in love with all types of garland... so it only makes sense that this would be a shop that I browse all.the.time. There are tons of amazing colored tassel garlands. There are several that I have been looking at for our loft... 




I think Etsy is awesome {I could spend hours looking at everything}!! It is a place that people can be creative, while make a living & that is truly amazing.

Spring Is Here...

Can you believe that it is The First Day of Spring already? For me I have a love/hate relationship with the season change at this point... I am more of a winter, cold weather kind of girl.
As much as I do love the winter weather, I do love some of the things that Spring brings.

Bright, blooming flowers would be my very favorite part of Spring {for the few weeks that they last before dying from the dreadful heat ::sigh::}...




I also really like the very few weeks of cool weather. You know, the weather that you can go outside & enjoy without sweating to death. 
It is a good time to be able to enjoy activities outside.
 Having a picnic, in the nice cool Spring weather, sippin' on some yummy drinks (out of a cute straw, of coarse), and let's not forget some yummy deserts-- that is what I love about Spring.

New Etsy Goodies...

For weeks, I have been brainstorming some new ideas for my Etsy shop- Garland Galore and More...& over the weekend I worked on some of those ideas. 

I love making the yarn pom poms, so I knew that I wanted to incorporate them into some party decorating ideas, other than the garland that I already have in my shop. So I thought it would be a cute idea to make some cupcake yarn pom poms. You can put them on individual cupcakes or use them as cake toppers. 



I also made some awesome cake yarn pom pom garland. I love nothing more than a plain white cake with some gorgeous garland strung over the top to add a POP of color. So it only made sense to create several different colors to list in my shop. 



Another goody that I added to my shop is an Easter canvas art. It is super festive & glittery!! You can put it in a kids room or playroom; or anywhere else in your house to add a special touch.

Zucchini Enchiladas Recipe

There are very few variations in our weekly dinners-- These zucchini enchiladas are my husbands favorites. They are super easy to make & you will definitely be left with a ton of left-overs for the next few days. 

Ingredients
9 small/medium sized zucchini
1/2 cup Shredded Cheese {Mexican Blend}
A jar of tomato sauce 
Handful of Large Pitted Black Olives 
A few pinches of Salt & Pepper 
Package of soft tortillas 
Non-stick spray 

Prior to preparation & cooking
Turn oven to 350 degrees. 
Spray non-stick spray into glass pan {8x12}. 
Chop up a handful large pitted black olives.

Remove all skin from zucchinis 
Shred each and every zucchini in a large sized bowl  
Put all shredded zucchini in a large sauce pan- add a few pinches of salt & pepper {or any other seasoning}. Cook on medium until all seasoning is mixed in & zucchini is cooked {warning: do not cook too long or zucchini gets very mushy!}. 
When zucchini is cooked, remove from sauce pan & put in a large bowl. {Note: there might be excess water in pan, so you might need to strain zucchini to remove it}. Add 1/4 cup of shredded cheese into the bowl of zucchini. {Note: You can also add a few more pinches of salt & pepper, if needed}. Mix everything all together.

At this point, I normally put the zucchini is two separate bowls. I cannot eat dairy (I use dairy-free cheddar cheese) or gluten (I use gluten free wraps), so mine is cooked separately from my husbands moving forward. 
You will now spoon zucchini contents into a tortilla & wrap it up tightly & place in the glass pan. I normally use 8-10 tortillas, but it will depend on how much you stuff each one with. 
Once all of the tortillas are filled & placed into glass pan, pour 3/4 of jar of tomato sauce over the tortillas {Note: You can put the tomato sauce in a sauce pan & add spices to it prior to putting on tortillas}. Sprinkle the remaining 1/4 cup of cheese. Sprinkle the chopped up olives {Note: I do olives on 1/2}.
Cook for about 25 minutes & let sit for about 5 minutes before serving. 
I am no Rachel Ray, but my husbands thinks that this is so yummy! This is such a good meal for everyone & there is no doubt that you will have lots of leftovers for lunch for a few days.

Friday Favorites- St. Patrick's Day Edition

Holidays are so much fun; decorating your house and dressing up. A few weeks ago, I went to Victoria's Secret & they definitely had some really cute shirts for St. Patrick's day-- very green and glittery, what more could you want ?! 

Here are some fun, comfy outfits that I would love to wear while out celebrating good ole St. Patties day. 


This Party Your Shamrocks Off tee is one of my favs !! The material is super soft and light-weight, so it would be perfect for the Florida weather that keeps getting warmer & warmer (::tear::). Pair it with some ripped jeans and sandals & your ready for some dinner at the local Irish pub. 

The shamrock {boobs} tank is a bit inappropriate, but think that it is pretty funny! This would definitely be a fun, easy outfit for hanging around. I am sure the weather here in Florida will be a million degrees, so this could work as a cover-up tank for the beach too. I am more of a sandals/flip flops kind of girl, but these converse sneaks are pretty awesome! 

A casual Friday work look is always a must, but the Victoria's Secret shirts just won't cut it for the corporate world. A white tee & jeans, with several pops of green would be appropriate Friday work attire. 

And you can always count on Essie and OPI to have festive nail polish for all holidays. I really love these two: Gargantuan Green Grape {OPI} and Shake Your $$ Maker {Essie}.

St. Patrick's Day Sweet Treats

I have said it once & I'll say it again, I love all holidays !! Being festive, decorating, and having an excuse to make/eat super yummy, colorful foods. 

St. Patrick's Day is super fun !! Rainbow and green everything !! My plan is to make all of these sweet goodies this weekend (you're welcome hubs!!) I love lucky charms, so I was super bummed to find out that the Original Lucky Charms are not gluten free ::sigh::. I did, however, find out that the chocolate Lucky Charms are gluten free, so I am on a mission to find them- ASAP. 
I will also need a gallon of green dye-- because everything we consume will be green for the weekend.

DIY- Spring Wreath

Several weeks ago, I bought this super cute doormat. I had been eyeing it at Target for quite some time, so it only made sense to scoop it up before it sold out. It is so bright, with beautifully colored flowers & I love it!


After I purchased it, I knew that I needed to make a cute wreath to go with it. So, lucky for me, Michael's had a 50% off sale on all of their flowers. I picked up some magenta, lavender and white flowers & a wreath. 
It was super easy to put together & I am so happy with the way it turned out. It screams-- Spring and it really spruced up our doorway. 





I am thinking about putting some of the wreaths that I have made in my Etsy shop, but before doing so I need to check out the shipping rates.
