Life has been a little crazy lately & I am sure it will be for the next several months to come. The past few weeks, I have really veered completely away from my normal routine of things. This week I am going to try to get back into the groove of things... one day at a time!!
So first things first... Meatless Mondays. There are so many ideas out there for meals that lack meat, which I love. Here are some things that I plan to make over the next few days/weeks...

In our household it is so hard to get away with meatless meals when you have a meat-lovin' husband like mine, but when you find meals like these it definitely helps. A perk that I have found with meatless meals, is that the preparation time is super short. This is such a plus for busy people like myself.
