Meatless Monday

Sweet Potato Chips

Ingredients
3 large sweet potatoes 
Salt 
Pepper 
Coconut Oil 

Prep:
Oven at 350 degrees 
Non-stick pan 

Peel skin off of all three of sweet potatoes. Cut into thin slices & place in a large bowl. 
Add some salt, pepper and coconut oil (I used All Natural Pure Coconut Oil) & mix up. I have also made a sweet version of the sweet potato chips- I used cinnamon, brown sugar, and granulated sugar. They taste so yummy!
Spread out the sliced sweet potato on a non-stick pan. Make sure to evenly spread them out so they cook all the way. Put in the oven for about 20 minutes. Check them, you might need to flip them around. Depending on how thin the slices are, you might need to stick them back in the oven for about 10 more minutes. 
When they are completely cooked, I let them sit for a little bit to cool down. They plate them & enjoy!! 
They are so yummy and way healthier than any brand of chips you can buy in stores.
